There is considerable debate about HACCP. However, HACCP is here to stay and is supported by a multitude of International Agencies including Codex Alimentarius. The Australian and New Zealand Food Authority (ANZFA) has moved quickly to adopt HACCP as its major food safety initiative.
What is HACCP?
HACCP, or the Hazard Analysis Critical Control Point system, is a production control system that identifies where hazards might occur in a food production process and installs actions that prevent the hazards from occurring. By strictly monitoring and controlling each step of the process, there is less chance for hazards to occur. A HACCP plan is also known in Australia as a Safe Food Plan.
